Most people will traditionally have tackled beetroot by cooking it - usually boiling it and thereby depleting it of some of its raw goodness (steaming would be preferable.)
To get the full benefit of the beetroot, however, you should use the raw variety - not the pre-cooked, plastic-wrapped supermarket variety (although this will do if you can't find fresh.)
You can peel your beetroot should you wish. If its not organically grown give it a good scrub in filtered water. Otherwise, peel the beetroot with a vegetable peeler and cut up to a size that can be accommodated by the chute on your juicer.
